Hello all,
I'm offering this beautiful Gyuto here today. It's Hitachi Blue #2 carbon steel which is very fine grain steel that excels in the kitchen. It's heat treated to RC63 and ground very thin. It's born to be a slicer. The handle material is stabilized Redwood Burl with an African Blackwood ferrule.
SPECS:
OAL: 13.25"
BLADE: 7.25" long, 1.75" heel height. It has been hand finished to 600 grit. The grind is hybrid full flat/convex which is down to 0.005" before sharpening.
STEEL: 0.11" Hitachi Blue #2 carbon steel heat treated to RC63.
HANDLE: K&G stabilized Redwood Burl with black and white G10 spacers and black carbon fiber pin.
