This chef's knife is made from ~1080 sawmill blade steel, with good toughness and edge stability. Heat treat protocol for HR 60-61, and ground to ~.008" behind the edge.
Overall length: 12"
Cutting Edge: 7"
Handle: Green and Black layered G10, carbon fiber tubes
