Had these in a drawer, bought them to be "new-ish beaters" and hardly carried them, looked into their history a bit after learning about the Coppersmiths, these do appear to be made by canal street cutlery before they closed. The rust spots on the slipjoint seem to substantiate the chrome molly claim I've seen on some old store listings. I had assumed they were something cheap like 440A.
Reclaimed American Chestnut, some worm holes and stuff that are filled with epoxy. The entire slabs seem to be stabilized with epoxy (a trait I find desirable since I tend to neglect stuff).
