While EE lists the core steel as 'Aogami' at RC 62, other places on the internet list the core steel as being Aogami Super. The box simply says carbon steel.

This one has been used for about three months in a professional kitchen setting for veg prep. Sharpened a handful of times, mostly touched up on a ceramic hone. Excellent performer, killer workhorse, amazing bang for the buck. The grind is spot on, an effortless slicer. Fit and finish is very good, never experienced any discomfort while chopping away for hours on end. Edge retention is great and touches up to incredibly sharp crazy easily. Blade is a bit scratched from going in and out of a plastic edge guard. Exposed core is heavily patina'd, never experienced any food discoloration or rust problems even when the knife went long periods without being wiped down. Sad to send it off, but I'm primarily using a Chinese cleaver at work lately. Comes sharp and comes with original box. I paid $76 + $8 shipping for this knife new. Asking $50 $40 shipped CONUS **SOLD**
