Hello,
Here is my take on a simple Santoku in premium materials.
It's nice light and thin without being wispy, and the balance is right at the front of the handle scales.
The handle is some nice vintage micarta from
Fixall
and is nice and neutral, and the spine/choil area have been rounded for comfort. The blade has a flat grind transitioning into a convex grind towards the edge for food release.
