3/32" thick stock 440C ss,factory ground & finished blades. Santoku is a flat grind,pretty thin & the parer is a hollow ground,sabre grind style. Book matched,stabilized curly maple handles. by me. Santoku is 10-7/8" OAL ewith 6" of cutting edge,and the parer is 7" OAL with 3" of edge. Nickle silver pins > Santoku is 1/8" pins,parer is 3/32" pins.
