Hello There, I have three chefs knives to list.
Each of these knives I very similar and share approximately the same specifications so I will only list one set of specs.
Overall Length: 13 5/8"
Blade Length: 8 1/2"
Handle Length (measured from the top of the handle): 5 3/8"
Blade Height (measure from heel to spine): 2 1/2"
Thickness: 1/16" with a distal taper
Edge Thickness: Ground to approx .01-.015 before polish grind and sharpening.
Steel: Nitro V
Rockwell: 62 - Treated by Peters Heat Treat
Handle Material: Cocobolo
Pins: Brass
