Hi all,
I've got a kitchen petty up for grabs here today. It is 26C3 ie "spicy white" carbon steel that has been heat treated to RC63. It is thin stock that is tapered and ground very thin behind the edge, down to near zero. The handle is beautiful curly Acacia and Redwood Burl both stabilized by K&G. It is petite weighing in at 3oz but should be great for all your fine chopping chores.


SPECS:
OAL: 11. 0"
BLADE: 6.0" long, 1.5" heel height. It has been hand finished to 800grit and then etched in FeCl. The grind is hybrid full flat/convex which is down to 0.004" before sharpening.
STEEL: 0.078" 26C3 carbon steel heat treated to RC63.
HANDLE: K&G Stabilized curly Acacia with stabilized Redwood Burl ferrule, black and white G10 spacers and black micarta pin.
