Here is the first of a pair of my Bird and Trout knives that I finished up during the week...

The 'Jause, Bird and Trout' - long, slim and elegant. A classic Bird and Trout design that also lends itself perfectly to the Austrian tradition of Jause - a snack of cold cuts that is normally served outside. Crafted in stainless steel with a full tang and filework on the spine. The scales are beautifully figured Leopardwood (also known as Brazililan Lacewood) with black fibre liners and a mosaic pin.

• Blade: Bohler N690 Stainless Steel (HRC +/- 60)
• Blade thickness: 2.5mm (0.1")
• Blade length: 107mm (4.2")
• Overall length: 228mm (9")
• Handle material: Leopardwood (Brazilian Lacewood)
• Fittings: Brass
• Full tang with filework on the spine, brass pins, mosaic pin, figured Leopardwood scales with black fibre liners. Comes with a custom fitted sheath with basket-weave embossed as seen.
