My Essencial Series was created to be a more accessible version of my work and it differs from my custom kitchen knives in that these blade are 1070 steel and laser cut. Since its introduction in 2012, my Essencial Series has been very popular especially with professional cooks and I made several different models. Eventually, I have to close the books to fill all the Essencial orders and now I have stopped offering them.
Recently, I have moved my home and shop to a new location and, as it sometmes happens in such situations, found some old blades that were out of sight in the old shop and decided to finish them.
This Gyuto is from the last batch of Essencial Series blades and I have only three of them left. I have ground only one blade so far so the other two can be ground for left or right hand and the handle can be chosen amon the ones in the picture, all octagon shaped and made from imbuia root with a detail in stabilized wood.
