For those not familiar, Chinese style cleavers are thinly ground all purpose kitchen knives. Not intended for hacking through bone or frozen meat like a Western cleaver.
I've been using this knife in the kitchen for vegetable processing for a few months now. Amazing slicer, very hefty, but very manageable. Glides through anything with incredible ease. Curved edge makes for awesome rocking motion on the cutting board.
Plenty of patina, no rust. I've kept it dry and oiled after every use.
Edge retention is amazing. I only had to strop a couple times here and there to bring it back to scary sharp.
Recently I attempted to get a couple very small nicks out of the edge. Not having any waterstones at my disposal I attempted using VERY light strokes on a Spyderco ultrafine ceramic. Unfortunately, this caused some microchipping. Lesson learned. I was able to strop most of it out. The edge is shaving sharp, but could probably use a quick touch-up from a more competent sharpener than myself.
Very small chip in the handle and a tad of separation at the ricasso as seen in the photos. Nothing serious.
Regretfully, I've misplaced the box it came in.
Asking price is less than half of what I originally paid!
