Hi all,
I have one up for sale here tonight that I'm excited to offer. It's going to be a real laser for your kitchen. The Z Wear tool steel is going to give you great edge retentions and really good toughness. The handle is K&G stabilized Thornwood Burl which I got from
Greenberg Woods
a while ago. It's super rare and I'm not sure I'll see it again. It reminds me of granite and polishes up similarly. It's balance point is just at the front of the ferrule and it weighs a scant 6 ounces.
SPECS:
OAL: 12.5"
BLADE: 6.5" long, 2.0" heel height. It has been hand finished to 600grit and then etched in FeCl. The grind is hybrid full flat/convex which is down to 0.006" before sharpening.
STEEL: 0.078" Z Wear tool steel heat treated to RC64.
HANDLE: Stabilized Thornwood Burl with Amazon Rosewood ferrule, black and natural micarta spacers and natural micarta pin.
