Anyone know why it has that small choil/notch at the rear of the blade? With a blade that deep, seems like it would be safe enough to grind/sharpen the blade all the way back (a feature I really like on many of his other knives).

Yeah I actually prefer those he does with the full edge like you mention. I think maybe he just does some like this for the appearance !
