Playing around with some kitchen patterns recently.

Cleaver/Santoku (Cleavtoku)
Large Chef
7" Chef
6" Chef
Paring Knife

The cleaver/santoku hybrid is going to be Mean! Can't wait to see the real thing.
 
The cleavtoku and 7" chef look great. :thumbup:

Is the cleavetoku gonna be thick like a cleaver or thin like a santoku? or somewhere in between?

The Cleavetoku is gonna be thin like a santoku.
 
Looking forward to seeing how they turn out. The straight handles on the 6 and 7" chef's look nice and basic.

I could do pretty much all my kitchen work with a 7" chef's and the paring.
 
Agree with other post that the 7" chef's knife and paring knife combo could do pretty much anything in the kitchen. But the Cleavtoku? :eek::eek::eek:... Wow!
 
My steel of choice for most of my kitchen knives are AEB-L. All of the larger ones up are AEB-L. The smaller paring will be out of thin Titanium.
 
Speaking of AEBL, the email I "sent" got stuck and I figured that out Wednesday, un-stuck it and received a reply today. The only problem is that Udeholm in Ohio was already closed for the weekend when I tried to call.

At least I have a contact now.
 
Been there and done that already. Waiting for response from 2 contacts there.
 
I like the straight handled 7 inch chef knife the best, very useful...my first choice for a chef knife lenght is 8 inch, but the 7 incher is close enough ;)

AEB-L is a great choice, from a user experience anyway.
