Yeah, my current chef's (Victorinox Forschner) is 8", but I could use a 7" just fine too :thumbup:

have you decided what handles to put on? still eager to see those burlap ones if you ever got around to finishing those.
 
Will probably heat treat them soon after I am done with the batch of S7s and A2s
