Some new stones and how to keep them flat

Flatten/maintian them on a Lee valley Lapping Plate, using powdered silicone git and oil.
 
Well, I should get my set of stones on Friday. I built a quick angle guide, which is just a 2x4 set at 110 degrees that holds the stone, so that when the knife is held at 90 degrees, it sharpens at 20. I'll try that out on a couple of knives. One thing though, how well do Norton stones work on harder stainless steel or carbon steel?
 
Both the india and waterstones work quite well. The india's aren't quite as fast as diamond on harder steels but very consistent, and waterstones will cut as fast as diamond at a similar level of grit in my experience, but will do so consistently over their lifetime. Diamond hones tend to wear out with heavy use. I've relegated my dmt coarse to zdp 189 and waterstone flattening to try and preserve its useful life. There's a 10 year old dmt coarse demo at a local sporting goods store that's worn to bare nickel, you could probably slide a mirror polished blade over the thing without scratching it.
 
well, i'll agree with the 'spend the money' crowd.. there's always more money but your hours are a finite supply.

you picked quite well, honestly. I'd spend the other part of the budget you had allocated on a decent paddle strop, and take someone elses advice on what grade diamond paste to put on it, my GUESS would be 1 micron.. (the 8000 grit is about 3 micron)

as everybody ALWAYS wants that last notch.. eventually.. :)
