Well, seafood is wild, isn't it? My own recipe Cajun gumbo file' with fresh sassafrass leaves added to the file', alligator tail, Andouille sausage, tiny baby corn, three kinds of shrimp, red, yellow and green bell peppers, red and white onions, bay scallops, oysters, baby okra, monkfish, smoked pork sausage, wild and jasmine rice, cherry tomatoes, crab meat, Zataraine's Cajun spices, mano-man! Make your tongue slap your eyebrows trying to get to it!:D

I dig everything but the baby corn.

It is just there for texture and visual enhancement. Believe me, it will taste nothing like tiny corn cobs when the spices and seafood cook through it!

I only have that old Mexican beer, Corona, so bringing your own might be wise.
