Something like a Roach Belly

Many of the suggestions there will fit the Roach Belly pattern (pointed tip with curved cutting edge, underset handle with no guard).

I too am looking for the same thing and might just order a decent kitchen knife from Henckels or Wusthof and have a kydex sheath made for it.
