Something like the large Sebenza 21/31 but.....bigger?

Freeman 451 Folder? Around 8 3/4" open. Button lock. Slick flipper, or thumb open. Titanium if you prefer.

Larger than a Large Sebenza 21 doesn't seem like light duty to me, I think if you need a larger blade than that, it's about time for a fixed blade.
The only folders I can think of that match your parameters and are of good quality and function would be the forementioned
Spyderco Police/ Military or one of Shirogorov's larger folders
Still my vote is to pair a Sebenza 21 with a Pacific
One to keep razor sharp for lighter tasks and one for heavier stuff. If you're 7'1" you should have plenty of room to carry both :p
At 5'8" I carry a 4" fixed and a 2.9" folder :D

I’ve never owned a CRK so I can’t directly compare but I believe it’s worth mentioning a Spyderco Nirvana and Spyderco K2.

I'm still trying to wrap my head around a Large Sebenza 21 being too small in someone's hands.

Larger folders do exist though. Some of Microtech's folders are larger and fill the hand well.
I'd say they are of comparable quality to CRK as well. Plus, they typically heat treat their steel a little harder than CRK for edge retention.
The knives they've been making lately out of CTS-204P are impressive.
I'm wondering if a SOCOM Elite might fit this guy's bill.
SOCOM Elite has right at a 4" blade with about a 5" handle with an overall length of 9.11"

I was going to mention the option of a fluted titanium Military; but BluesBender posted a picture of it
There's also the ZT0452, which is of comparable size...but you might want to stay away from flippers because the tab limits where you can put your hand.

Still, though, such large hands will make shopping for a high quality knife frustrating. If you can carry a fixed blade, that might be an easier option. OR, you could reach out to one of our knifemakers and see if they can/will make one to your specs

To add to my last post, it's not up to sebenza quality; but the spyderco police 4 probably has closer to the length you want; but it's rather slender (look for the k390 version)
 
Cold Steel XL Espada. If your hand is too big for that then forget about anything else. I am pretty sure it is the largest folding knife I have seen. 7.25" blade, 9.25" handle and 16.75" overall open.

I would not compare the quality to a Sebenza but I bought one for a guy and it was very heavy duty.
