Hello BF,

Knife is sold, thanks for looking!

This is my six inch classic chef's knife. It was a recent cancelled order.

OAL is 11, and cutting edge is 6 1/8. Thickness is 1/16 inch, Blade is 1 1/2 inch spine to edge.

Handles are stabilized Red Dyed Spalted Brich. Primary grind is full flat.

Held by SS Corby Rivets. ATS 34 knife is heat treated, cryogenically treated, and tested to guaranteed Rc of 59-61 by Peters of Meadville, PA.

I assume you make these to order? Can you make something like this in an 8" chef's knife a little deeper blade?

I do, as made2cut says. I make them in 1/16 and 1/8, preference and function dictate your selection. Funny thing is that the 1/16 tends to outsale the 1/8 in the 8 inch chef and Santoku about 5 to 1.

Check out this thread for some more of John's kitchen designs. I have an 8in, 6in and a paring knife from him. Just my personal opinion but my 8in seems a little too flexible in the 1/16th inch stock. If I would do it over again I'd have him make it out of 1/8 in with a nice taper.
