Just to add something - if you are putting this much thought into a gift for your nephew before he is born one thing is for certain - YOU WILL MAKE AN AWESOME UNCLE. For this reason alone, knife knut or commie hippy (just a joke people) he will love you. And when he is old enough to realize the really important things in life he will treasure what ever you get him.

I have changed my recommendation. Two GEC #15 Boys knives. You will be upset if you don't get one for yourself and it will be something both of you share. They really are that nice in the hand.

he turns 10 or so]

A #15 Boys knife with Nitebrite handles would be an excellent gift when he turns 10. Heck I've turned 10 many times over and I still get excited about a glow-in-the-dark GEC.
