Spyderco for cutting food and slightly more delicate work?

I don't have many spydercos but my Southard is a great food prep knife.

Blade is long enough, has enough belly, and profile is OK for most foods. Might wedge in thick proteins though.

Also, most of my knives have a lot of shoulder removed and then polished, it just glides into food.
 
I have several Spyderco's, and my favourite knife by far for food prep is the Police 3. The full flat grind of the long thin VG-10 blade really slices well. The knife is easy to clean and maintain, the steel touches up nicely and never stains or leaves a bad taste. My other favourites are the Caly sprint, the Endura, and the Military. I find the longer blade of the Police 3 most useful for cutting apples and other fruit, as well as sandwich prep/cutting. I will say this, no other Spyderco slices an apple as well as the Police 3.

Whatever knife you choose, a full flat grind with the longest and thinnest blade you are comfortable using/carrying are the features I consider most important.
