I was thinking of getting a spyderco with H1 steel for whenever I am going to be near water. A quick question is the steel completely rust proof?

Yes, wish they made a filet knife.
A good fillet knife should be flat ground, H1 can't be flat ground in high production numbers.
Aren't the Spyderco yellow Dragonfly's in H1 flat ground?
Yes....but I would prefer if Spyderco came out with a chef set in H1, similar to the ESEE/Becker Kitchen Knife set; now that would be the bee's knees.
The USN Catcherman (H1) is the closest that I've seen to a classic filet knife. I have one and it's with me whenever I go fishing or hunting.Yes, wish they made a filet knife.
I believe they are hollow ground.
A good, cheap filet knife is the Forschner Breaking knife. I like the 8" for fish in the 6" to 60" range. Very good corrosion resistance, not rust-proof like H1 though.

That level of corrosion resistance for cutting food seems kind of extreme.
Only if you're not involved in the food service industry.
