VG 10 hands down. I've never yet had a knife in S30V that could hold an edge worth a *&^*%. VG 10 is an excellent steel, and I have many from Spyderco that are very good performers.
 
I haven't carried anything with S30V long enough to get a good feel for it but I have become a big VG-10 fan lately.

I carried a Caly 3.5 ZDP 189 off and on for a year. Love the knife, but I finally cried uncle to the time it took keeping it sharp. I purchased the VG-10 Caly 3.5 a month or so ago and this stuff is like butter, I love it. It is so easy to keep hair popping sharp compared to ZDP.

I performed a blade swap and now I carry a Caly 3.5 VG-10 with carbon fiber scales. It splits time with my Military S90V blue.
 
It's those big honking carbides, and Spyderco gets the HT right. :thumbup: As long as you don't try to put a mirror edge on it (in my experience).

You got that right. I don't usually sharpen it beyond 600 to 800 grit. Sometimes I leave S30V at about 400 grit which is about a DMT fine I believe.
 
I tend to prefer VG-10 but really only because I have had better results sharpening it over S30v. This may have some to do with the knife and blade size more than the steel, I haven't really paid to much attention to it.

I have not had any issues with S30v chipping yet, but then again I havnt really used it for too much.
 
My favorite Spyderco knives use VG-10, but based on just steel selection, I'd pick S30V. I find myself needing to sharpen S30V less frequently, although I can put a very keen edge on VG-10 a little more easily.
 
I like both steels but Id take S30V over VG10 since it holds a working edge significantly longer. I think cts-xhp vs s30v would also be an interesting poll.
 
All of these steels mentioned oh my. Im relatively new with steels as in knowing what they are. The only things that I know I've tried is 9Cr19MoV and 7Cr17. I know I can get the 7 really sharp and haven't had as much luck with the 9. But I also only have a crappy condition stone.
 
I like VG-10, but, if pressed, I'd go with S30V all the way, especially Spyderco's version of it.
 
I can't comment on S30V, my Para 2 comes Monday. But my experience with VG-10 has been great. I like the ease of sharpening on that steel. I completely destroyed the edge on my Endura by cutting roofing shingles with it. A little time on the sharpmaker and I was able to get a hair shaving edge back on it. Also, what do you guys mean by micro chipping on S30V?
 
I have more knives in VG10, but voted for S30V in a pocket knife. VG10 works great in kitchen knives, and you don't see many for sale in S30V.
 
I have a large collection of VG-10. Several are kitchen knives from Shun. They are awesome in the kitchen. They also happen to be 33 layers. My Spydies are Police, centofante, Ulize, Endura, Delica, Harpy, D' Allara, and Police Spyderco blade. I have several S30v Spydies and Benchmades. I like S30v just fine and have never chipped one, but VG-10 just seems to get sharper.
