Spyderco South Fork Performance Review and Testing

What an awesome cut test man. Great job!! I would have been pretty exhausted after all that cutting lol

It was a lot of work, but the South Fork came out great and performed as expected. :)

After your tests this knife seems to me as I must have one.

Funny, I consider myself a knife guy yet just recently discovered this blade. Admittedly, at first it didn't appeal to me-it just looked kinda kitchenish. Then I read and leane more about Phil and this knife and really want one. It is truly a perfect knife. Built to cut, period. Obviously it is among the best production knives out there. The shape is simple and yet thought out, purpose built with great materials and quality. I just got a Bushcrafter and now want this...bad. Funny, Spyderco is so well known for folders yet every fixed they bring out is a home run in every possible way. Love my Bushcrafter and Street Beat.

Last fall we skinned, cleaned and butchered 4 whitetails with my South Fork and it required no sharpening during the process. It was 15° and dark when we started, so conditions were bad and the deer were nearly frozen. Quite a test. The blade worked flawlessly with no chipping. 5 or 6 passes per side on a 600 grit diamond hone afterwards left it ready for next year.

In the $250 range I think..

Yes it's made in Taiwan, the quality is excellent as is the HT of S90V.

To get that level of finish etc in Golden it would have cost a lot more.....
 
I finally sharpened mine after 6 months in the kitchen after being used by me about 20 times to cut everything from meats to vegetables. I ran it on the worksharp which I assume changed some of the original grind. 5 pass per side on the 320 grit 5 per side on 6000 grit then I stropped it with green paste. AMAZIng is all I can say. I filleted some large chicken breast with it and it is the first knife I have ever used that did not require a sawing type motion to slice through the meat. Literally just push it through and it cut the entire length of the breast. I am very impressed and will try it out on a hog later this year.

Don't know why, they make some of the highest quality products in the world over there in a lot of different fields.

People over in that part of the world have been making knives and other edged tools for thousands of years before North America was even found....

I'd be far more shocked if I saw cheap stuff come from Taiwan. The quality, fit, and finish of this blade puts a LOT of others to shame, including one made in America. My Southfork easily rivals a Dozier in fit and finish, and I think *very* highly of Dozier's work. It's a screaming deal.
