You should start with an X coarse hone to remove the steel. I like DMT Diasharps, and a 6" model shouldn't be too much. You can lean it against the Sharpmaker rods in the 15 degree slots until you reach the edge by raising a burr on one side, then the other, then refine the edge on the sharpmaker rods until you have a clean edge. From a X Coarse edge you may need an intermediate Coarse or Fine stone to get up to the Spyderco Brown stones. Or you can just use a cheapie hardware store 2 sided stone to get do the rebeveling, and save money compared to buying 2 different DMT stones, but I really think you will get more performance out of the DMT's. Once you have a clean 15 degree edge you can microbevel at 20 per side and you should get a very sharp edge pretty quickly.

How much steel should I be taking off in order to fix either a wire-edge, or to remove the edge steel?

I'm in grad school, so the cheaper the solution the better.
 
If it is just a wire edge you don't need to take off that much metal just the burr. Some people recommend running the edge through a hard block of wood to help pull the edge off. Others increase the angle to like 40 deg. per side for a couple passes to try and remove it.

It has been suggested that lighter strokes create less of a wire edge while sharpening. You might also want to try using a magnifying glass to try and see what is going on at the very edge.

I am not an expert but this should be a start. If some of these things don't work you can try taking off some metal in case the edge got a little hot and soft. You might want to try some sand paper for a cheap start. If you have a sharp maker I have heard of people taking strips of sandpaper and wrapping around the rods and using paper clamps (the black triangle shaped things) to hold the paper on. Then using the flats of the rod with a coarser paper can speed up metal removal. Of course just time on the sharpmaker will remove metal, just takes awhile longer.
