The UF will give you a very nice polished edge, at least it does for me. I like to finish up my D2 and S30v blades on the UF stone. I have also touched up my 154CM with it to make it hair-popping sharp!
I have all 3 benchstones and I love them. I've read the UF is supposed to be somewhere in the area of 1800 grit and it works great as a finishing stone. It will mirror polish an edge as long you don't skip through lower grits. It's also the flattest stone I've ever seen and the only maintance it requires is cleaning with soap and water.
I used to use soap and water, but at Thom Brogan's insistence I tried AG Russell's rust eraser. It works very fast with no water, and gets the sones cleaner than I was getting them with comet and water, with no drying time. Fot $5 it's worth a try.
