Stabilising blade finnish on carbon steel bevels

I realy like the grinder finish (120-240 grit) on the bevels. But it oxidises quite fast an if some som one has touched it the blad finnish becomes uneven. How do you guys stabilise the finnish?
 
Wipe with down always and let a patina form with use. The patina will be your 'stabilized' finish. Even though a patina doesn't stop all rust, it does a decent job of it
 
Try "polishing" with Flitz (or another similar metal polish) first and then keep it oiled. I know Flitz works great for me on carbon steels with hand rubbed finishes of 400 grit and up (or "down" rather ;) ), but I've never left a blade at 120 to try it. Can't hurt to try! :)

Food grade mineral oil certainly helps, but not nearly as much as people claim. If you require a food-safe protectant, try Frog Lube.

Any steel at such a coarse finish is going to have corrosion issues, unless it's coated. Yup, even "stainless" steels. I would never send a knife out of the shop at less than a clean 400-grit finish.
