Jonesy all of the steel manufacturers have a differnt codeing for all their steels. It has been a mess for many, many years.
Depending on where you got the stainless would determine the color code.
All of the above info is based on my 35 years in the shop and I've been out of it for going on 6 years, but I doubt anything has changed.
I know that red was generally 303 and I "think" green was 416 SS for some companies, put a magnet on it and if it is magnetic, then it's a 400 series SS.
Once I made a knife and when it came back it had about 10 Rc marks on it and a note from Paul: "I dont know what this is....but it never got hard!" I heard a certain well known steel supplier recently sent Bob Loveless 100 lbs of ATS and nearly half was 440C.........
