Here's my $0.02. For my folders, I prefer stainless. For my daily use fixed blades I prefer carbon steel. However, now that I have held in my hand my first two ESEE knives and feel how AWESOME they are, I would love to have a large fixed blade RC5/6 PE in stainless for my buried cache sites where I don't get to frequently inspect/care for them. I have more peace of mind knowing that if I do need to retrieve the cache in a bad situation I won't be stuck with a badly rusted or compromised knife as my only choice.

Brutane, you could vacuum seal your carbon steel knife, potentially with some kind of product that absorbs moisture; http://www.sta-dri.com/ for example.

Or you could leave them in a bag with a desiccant. You can get them from beef jerky bags.

Even better: soak them in chainsaw oil.
