Stainless Help!?!

Anyone ever use Sandvic 19C27? I usually forge my blades from 10xx or similar steels and do my own heat treating, but a family friend has asked for a stainless skinner to take on an Alaskan hunting trip. I don't have much experience working with stainless, but it seems like I read somewhere that the Sandvic stainless line was very fine grained, and Admiral has it much cheaper than the Crucible steels. How does it compare to S30V as far as edge holding, toughness, and ease of grinding/finishing? BTW, Paul Bos will do the HT.

How about 154CM or better CPM154.The CPM154 is liked by both makers and users !
