Stainless San Mai tutorial?

I'm looking for a tutorial or some info on making stainless San Mai. I know the welding temps will be higher but I'm not sure how high. I was thinking of 316 and 1095. My plan is to TIG it all the way around after it's super clean and flat. May even take it by a buddy of mines to run it on the surface grinder. Then just go at it and see what happens.
 
That's what I did. How hot? I was bright yellow. Welds took fine. Where I screwed up on a couple billets was over heating when drawing out and trying to draw too much at a time. Squished the carbon steel out like an Oreo you left on your dash in Phoenix.
 
I wrote a tutorial on this awhile back. You might check for it. I would recommend using 410 for the stainless steel. If you can't find what I wrote I will do it again.
