Is there a stainless that i can plate cool and all the other except cryo.
i would really like to try it.
I now have the stuff to do it with.kiln, 3/4" alm. plates. foil.
if this is not all please i need please tell me.
i need to have someone suggest what steel i should be looking at.

The reason for the cryo in ss is to complete the quench, otherwise you get retained austenite. However, higher tempers decompose the RA. SS, when taken to the higher tempers and tempered three times probably won't miss the cryo. They won't have the same hardness and corrosion resistance as a lower tempered steel and may lack the fine edge stability, but they'll still be good knives. 154 CM and S30V look like good candidates.
 
Here is a cheap and easy way to go about home cryo... Get yourself a block of dry ice and put it in a large cooler. Put the blade on top of the dry ice and leave it over night, take it off the top the next morning after it normalizes to room temp, give it another 2 temper cycles in the oven.
