Steak Knife Recommendation

Glad you got some, I was going to recommend victorinox but also big fan of the old CC stuff. I bought some messermeister a few years ago without putting in enough scrutiny and yep made in china. I hate funding the prc. Those should be handled in what hickory? A little wood conditioning from time to time and they will outlast you.
 
BDubbs; I've been using them some and they're perfect. I didn't quite understand what the deep curve of the blade was all about until I was cutting steak with them. CC knew what they were doing! Well pleased.

I recommend Kogetsu. I bought one Kogetsu Gyuto when I visited Taipei.

I personally find the 240mm or 270mm knives ideal for cutting steak, and I use the 270mm myself. This brand offers different tiers, but even the standard model is more than capable of handling any meat-cutting tasks. The blade is strong and sharp, as long as you know how to maintain it properly. It’s defo practical for everyday use! High carbon steel is incredibly sharp and easy to sharpen when needed.
 
Tried the Wusthof Epicure maybe two years ago and they’ve held up every bit as good as the Classics so far. A little less pricey than the classics which was fine because we almost never sit down and cut steak on individual plates. Forged. Same blade steel as the classics. I just like the name/quality/price-point. Usually about $50/ea when you buy a set, and a little less if you’re looking at individual open-box stuff on eBay.

I like my Wusthof steak knives a lot. Thin and easy to sharpen. I hate serrations for meat. I touch them up on a ceramic rod and they slice very well. Only paid $100 for 6 with a block. I also have a Bradford Gatsby Steak knife but those are over $100 each. Very nice but thicker and not as easy to sharpen, but don't have to often with harder steel.
