Steel Opinion

Hi,
I am new to this site and need some help for my first knife. I am mainly a blacksmith that does ornamental, but right now I want to make myself a survival/hiking knife. It is going to be like the pathfinder knife only that it's not going to cost $200. So my question is what steel would you recommend for a knife like this? 01 or 1095? This knife will be used for everything under the sun. Whether it be filleting a fish or cutting wood for traps and fires. Also, how would you go abouts heat treating such a knife? Would I heat the spine to a bluish color and the edge dark straw? Also, I don't think you need to heat treat the tang? Thank you so much for the help.
 
With respect. I believe you should read the "stickies" at the top of the page. I'm sure there will be lots of good stuff there.
