I have decided to attempt my first scratch build knife after I clear out my current projects.

I think I want to attempt a Kiridashi style blade.

I’m still trying to understand the metalergy aspects. Will you please recommend a good steel for a first time project.

I will be using the material removal technique with hobby grade tools and hand files. Heat treating will be outsourced.

If you are outsourcing your heat treat, use whatever you want!!
Generally people use kiridashi for general, small cutting tasks, like a utility razor.
So since it’s not going to be used for chopping huge things, I’d go for something like AEB-l, at around 61-62 Rockwell C. It’ll hold a super fine edge and is stainless, and easy enough to work with hand tools.
 
I prefer kiridashi in carbon steel. 1084 or 1095 will be good. W2 will be better. The HT is very basic on these and anyone with normal HT ability can do them. I like these steels between RC 60 and Rc62.
