Steel vs Titanium vs ceramics

Steel, definately...steel. No wait!!! It's titanium...yes, that's it, titanium. On second thought, it has to be ceramic...yeah, that's what it is, ceramic.

Their all better.

I am going to construe your 'best' question as a request for more info....

Steel is steel, lots of different breeds and very useful, nothing is able it replace it in all ranges.

Ti is tough, if you are looking for a tough, springy blade, then ti is it. But it does not cut all that well compared to steel or Talonite, or even ceramic.

Ceramic cuts well in some areas, but currently, the ceramic available is fragile compared to steel.

Talonite, cuts well, very corrosion resistant, not as tough as steel or ti. To learn more about Talonite:

It reallly does depend on what you are going to use it for, my suggestion would maybe be ceramic, except that it can be brittle...
 
Steel all the way, there's no substitute yet. Perhaps Talonite, but I haven't used it long enough to be able to suggest it. And there's always Stellite and Cobalt Dendritic for that matter.

Ceramic's ductility strength is always questioned and maintenance is PITA. Titanium is lightweight but it's not a good all around metal for knives.
