Steels: Elmax, m390, CPM 3V, CPM 154, CPM M4: For Demko AD-10

If you need rust resistance then M390 or Elmax. If rusting is a non-issue then M4 or 3V..

My choice = M390.
 
So what your saying is you have never used elmax?

Elmax if memory serves correctly is one of few steels that have Zero reports of chipping and in my experience over the last almost year I have seen not much more than small deformations. Elmax is not at all hard to sharpen and can even be sharpened on stones as simple as the classic Arkansas. It's also pretty tough for a stainless so if you must abuse your blade you would have little worry. If you are talking chopper blade >6in then we shouldn't even be talking about stainless IMO.

your write i am out of my element when it comes to this steel. just stating info from what i have gathered. i dont think there is anyone who has really beat up an elmax steel blade like people have cpm 154cm steel blade. so info on this subject is never going to be exact unless one of us has a video comparing the two. i have heard people say elmax is really hard to sharpen but they could be noobs like me lol

I have, and yes it's very tough even at 62 HRC and ground thin (.010" behind the edge).

It's not hard to sharpen at all compared to some other steels either.

maybe i should start doing my research here then lol i guess i was completely off i knew it was a great steel but wow i am starting to get more and more impressed with it. i really want an elmax blade now !!!!!
 
i have seen this video and think it is great. also would love to see this blade do some prying or chopping but i know that no one in there right mind will do that to this knife unless it depended on there life :D

You would have to buy one and do that. ;)

I don't do hard use testing anymore, and on a one of a kind Custom knife I waited a very long time for that's just not going to happen.
