Gentlemen:
For your consideration is this chef knife in CPM S35VN/Stabilized Curly Maple. The blade is 2" wide, .095" thick at the ricasso, flat ground to .010", then deep 15 degree bevels applied - stropped to tree-top hair. The blade has a radical distal taper to the point - the tang is also tapered. Neutral balance is at the front of the bolsters - the blade is hand rubbed satin and is finished off with 220 grit pull strokes. I had the curly maple stabilized by K&G - it came from a batch of curly maple I bought back in 1983. This is a real slicer that will stay looking like new - if you want to clean it up, pull strokes on 220 wet or dry sand paper, lubricated with Windex is all you'll ever need. I hope you like it!
