Gentlemen:
For your consideration is this 8" Chef Knife in CPM S35VN/Mammoth Ivory. From the first generation chef knife that I have in my kitchen, this is the third design change with a raised handle and slightly smaller palm swell - your knuckles clear nicely when chopping. The dovetail bolsters are pinned /soldered and line up nicely. The top of the bolsters have 40 line/inch thumb serrations. I purchased the bark mammoth from Mark Knapp and had it stabilized by K&G - both sides match nicely with tans, ivory, and blues mixed throughout. I have over $300 invested in the mammoth alone - it's solid with no hidden cracks. The CPM S35VN blade is quite thin - .090" at the ricasso. It was flat ground to .010" and 25 degree bevels ground making it a real slicer. If you want a steeper angle - I can grind it to 20 degrees at no charge. If you want a sheath to keep it at your side please add $55 to the total - a sheath may be a good idea - a knife like this will "walk away" in a busy kitchen.
The blade was hand rubbed and finished with 220 grit pull strokes - the furniture is also matching satin.
