The Sebbie is designed to be taken apart for cleaning. If you are that paranoid, take it apart and wipe everything down with alcohol. Reassemble and you are fine.
I wouldn't be overly concerned since the type of people that can afford a real Sebenza probably understands hygiene and you should be more worried about the flatware that you use in restaurants.
