Still looking for an outdoor kitchen knife

Yeah, that was my thread, and yeah they looked promising.

I decided they were maybe just a little too short though, and I was starting to question just how legitimate the website really is.

Scroll down the page and check out the 170mm western deba, I think it would make a great outdoors cooking/general purpose knife. A review of the larger 240mm model can be found here link.
Have you considered one of the flat ground grohmann's? I think they would perform very well for kitchen duty as the upswet handle would keep your knuckles up off the board and are also better suited for general camp chores. I like the one with the water buffalo handle here. I guess that's enough suggestions for now, good luck.

Good call. So far I'm see 4" versions and 5.5" versions. I was sort of looking for 4.5" - 5".

I'll add my vote for the Grohmanns. They're excellent knives, extremely comfortable to use, and well-suited to an outdoor kitchen-type role. I've used my #4 extensively in that role, although I switch to a #1 flat grand for fine work. Both are excellent, and hard to beat for the price.

... of course, they're not in the same league as some of the customs and semi-customs that have been suggested, but they'll definitely do the job. And they hold a fantastic edge.

Even though I have never handled it, I love the looks of that Bill Buxton knife. It looks like a great utility/camp/kitchen knife. I can't remember how much he was selling those models for. Also, I remember A.G. Russell has some type of folding knife called the Hocho that may another option for you to look at.
 
If you're looking for an actual kitchen knife rather than a utility knife like you've been showing, then look at Thomas Haslinger knives, he makes them in S30-V and BG-42, with handle materials such as carbon fiber or ironwood. You can get them from a few websites including www.epicureanedge.com or his website: http://haslinger-knives.com/ The are a little bit thicker and softer than the traditional Japanese kitchen knives (which are way too thin and hard for what you're talking about), though they're still very thin, and 60-61 Rc. I think his smallest one is about 6" when it comes to kitchen cutlery, but makes some other styles if you'd like.

I've never dealt with them. I did a quick search of the G B & U and there were only positive comments from several years ago. You might want to give them a call.
A Google search for "Ishikawa knives" shows another dealer has it, but for considerably more money.

I got this one about 15 years ago...sadly EKA Knivar doesn't make it anymore. IMHO it's a perfect folding kitchen camp knife. Very thin chisel grind, 12C27 steel I guess...pretty good back lock, can be taken apart easily for cleaning.
