Stone sharpening

So.... I have never had any good luck with stones to sharpen. I hear people talk about it all the time.

I was hoping someone who makes knives has a video they made about how to sharpen your knife on stones after you are done grinding etc.

I have to be doing something wrong. I need helps pin pointing it, and I think a video would be helpful.
 
There are quite a few on YouTube put together by very skilled kitchen knife guys. Do a search on Japanese water stone sharpening or Dave martel knife sharpening.
 
I'm pretty sure that Murray Carter has some videos as well. Have you tried the sharpie/layout fluid trick? Cover the edge/blade with sharpie so you can see where you are removing material so you can see how consistent you are. What techniques/stones have you tried- full disclosure may help point out areas for improvement.
 
As of right now I have a little smith three stone system (course, medium, fine). The goal is to make my knife and have the geometry just right so I can sharpen on a stone with some passes. But that didn't happen lately so I use my grinder. But my goal is to be able to making it pop hair with stones.
 
Man you are going to have to practice. Sometimes I still mess up but the good thing is if you mess up you are removing such a small amount versus the grinder removing a lot.

I like the water stones and I like to put my finger on the edge and find to where the angle with my finger tips, half on the edge half on the stone. That helps me keep the angle right.

Does that make sense?

You are going to get to the point to where it seems impossible then keep trying. Then the light bulb will go off.
 
Good advice from everyone. Practice with a crap knife, even if you have to buy one. Take a black Sharpie and color both cutting edges. Sharpen a bit and look at the blackened edge.....
You'll know you're finally "there" when you have that wire edge at the point. You call roll it from side to side with your finger. Dad told me to increase the angle on the fine side only to remove the wire edge. Then I take her to the strop. I test before/after by holding the edge on a 90' angle to my thumbnail. Push it off, You should have some powdered thumbnail on your blade. Heck w/shaving hair.
