Stones from Congress tools

I`m about to take up knife sharpening. Waiting for a knife jig and 10 stones from Congress. Have ordered the Moldstar stones from 80 - 400 grit, Flex 400 grit, and Superfine 600 - 1000.

Have a couple of random stones with 4000 and 8000 grit too. And a strop.

Will be sharpening and reshaping chef knives of fairly high quality steel. Same goes for hunting knifes from Fällkniven. First projekt Will be a restoration of a (simpler) Sabatier 8 inch chef.

I would much appreciate to learn what stones you have used from Congress, and for what purpose.

Iirc @Ankerson uses mold masters for his knife tests. Uses them on his edge pro.

I use Mold Master #240 a lot for reprofiling.
Cuts well and fast.

Okej, maybe the Moldstar 80, 120 and 150 Will be to much most of the time? Tnx!

I do not have any experience with Mold Master lower than #240.
They may be better for reprofiling.
Let us know when you try them.
