Really enjoying your collection Barrett, such variety. ( sorry I posted Kroo. All my knives are packed and forgot which flames model I have.🥴 ).
 
Au Sabot le tonneau. Really nice chopper, the machining on the bolsters is crude- was told it is due to old worn out dies- Despite this it is otherwise very well-assembled, no gaps, no play at all, smooth cam tang action, stamped blade, flush pins and very nice in hand feel due to rounded slabs. French carbon is pleasing, gets very keen.

I thought I had a lot more straight edge blades, but many of them have a slight curve at the tip - a lot of French knives are like that.
