Streamlined gear!

I am a hunter, hiker, camper, and preparedness type of person. I have several stoves, packs, tents, etc. I am wanting to get rid of the excess and streamline my gear. My criteria are:
1. Sturdy- built for the long haul and not just a nice hiking trail.
2. Simple- few uncomplicated pieces.
3. Sustainable- works long term without unavailable supplies.
4. Systemized- works together. day gear + overnight.

I am looking at this setup as of now:

On Body -at all times
- BRKT Fox River
- Case Trapper or Benchmad Griptillian
- Swiss Farmer
- Compass
- Whistle
- Fire kit

Kifaru E&E - day pack
- Poncho
- GI canteen w/ cup and stove
- FAK
- PSK
- Fish kit

Alice Pack - overnight/meat hauler
- Hennessy Hammock
- Sleeping Bag
- Hatchet/Machete
- Cookset?

This is the basic idea and realize there are many other small items to consider. I am just trying to convey the basic idea of what is in my pockets, in the E&E for the day and then the Alice for overnights. The E&E would probably just get rolled up in the Alice on overnights. Deciding on a cookset is where I need the most help. I like the idea of wood burning and just boiling water. However are wood stove good enough? Other than longer cooking times what are their downfalls. Give me you responses on a cookset or any ideas about the current setup.
 
If you wanna go stupid simple, and streamlined, Get a guyot bottle to cook in. I have a MSR stoway pot too that is awesome, and small. I keep a titanium spork in it.:cool:

I do have a ss Guyot on my wishlist. That with a ss cup and spork should really be adequate without sacrifice. The stove is the hard part for me. When a campfire is not feasible the options are alcahol, propane, wood, or tablets. Wood being the only one meeting all my criteria. I would carry something for speed if needed though.

I think you're definitely on the right track and I've learned from your post already.

Until this point, I have always just had a big box-o-hiking stuff, and a few different size packs. Before a trip, I'd load up what I thought I needed in certain sized bags and be on my way. I think having them divided up into different sections and just adding on as you go 'up' in needs is a good idea.
