Stripping and sharpening or re-profiling BK9

1. What is the best way to strip/remove the coating?

Chop EVERYTHING.

I have been stripping mine one stick at a time.

Sorry its DerekH my search power is weak but basically you knock the shoulders off of the grind with a diamond nail file. The soft spongy kind. then you lay sand paper on a mouse pad or two and run the knife away from the edge like your stropping it. Work your way from 220 or 340 up to 1000-2000 you will have a nice convex. Its real hard to screw up a BK2 unless you get power tools out.
 
Citri-strip stuff didnt work well for me. Klean Strip works absolutely brilliantly. As far as convexing, I invested in a $40 HF belt sander and finsih by hand with mousepad and sand paper, then strop. I've done a couple completely by hand and I have to say that belt sander is the best $40 I ever spent!
