Stupid Easy Dutch Oven Meal

1 pound smoked link sausage, cut into 1/4 inch pieces
1 box Zatarians Red Beans and Rice mix
1 can Rotel Tomatoes
3 1/4 cups water
With the Dutch Oven directly over the fire, fry out the sausage, add the water and dried beans and rice and get a rolling boil, be sure not to let it stick. Remove the oven from over the fire and place to the side, or raise it high enough just to simmer. Add the Rotel. Cover with the lid, and add enough coals to just keep it barely simmering. Cooks in about 30 minutes. You can't mess it up unless you burn the rice.
 
That sounds delicious. I have made Zatarans jambalaya with sausage many times. They make good stuff.
 
Wait a second ... I thought EVERY dutch oven recipe started with frying up a pound of bacon. Hmmmm. It does sound tasty though.
 
I love the zatarans mix for jambalaya. With some anduille sausage and shrimp its great.
 
Any meat is good with spiced beans and rice. I usually carry small flavor packets of spices and some quick rice (saves fuel) to dress up any field meat I can round up. You would be surprised how much better a squirrel, frog, turtle, or fish is cooked with a few spices and rice compared to just spit roasted.
 
Sounds like a good recipe, I will give it a shot in the spring. I just picked up a lodge #8 round bottom kettle that will be perfect for this!
 
Add tomato soup in addition to the water to stretch it some and help keep the rice from sticking. Makes it, well, soupy :D
