Since we are unable to get thin .070 or less AEB-L for thin knives, I wonder if you have any ideas what might make a good substitute steel. I would like to make a number of paring knives that would finish out about .060 or so. Any thoughts or suggestions?

Alpha Knife Supply has thin CPM154, 440C, 20CV and S35VN (around 0.07") if you want stainless.

Yes, stainless is necessary. Just wondering what ss steels might have similar properties and cost. I'm guessing there are several others doing the same or already have a good substitute. I will check on cpm154, thank you much.

I'd go with 440c if youre worried about cost. I make pairing knives from .0936" aebl. Just gotta grind more 😁
