Lots of good knife suggestions in this thread, but I have a different type of advice: watch who is supplying the knife to Amazon. I've bought a number of knives from Amazon with varying results.
Sometimes you'll just see "Offered through Amazon". That generally means you won't know who the actual knife supplier is. If it's just Amazon with its own inventory, it can be a crapshoot.
And sometimes you'll see "Offered by ______________" some other online retailer, who is selling through Amazon. Some of these are good, and some are so-so. I've gotten knives with very uneven grinds and gritty blades. Nothing devastating and Amazon has a good return program. But just keep an eye on the supplier, and, if it's a third party, look at their actual website and try to find reviews and feedback.
And also, absolutely do not count on finding the best price through Amazon. I realize you have gift certificates to use, but compare prices on your eventual short list of candidates. Amazon prices can be significantly higher than some online knife retailers -- though can also be lower. I've gotten a couple of excellent deals on Amazon, some OK deals and have seen some prices WAY higher on some knives.
